“Basmati rice with vegan mince and champignons” is a personal invention recipe, which I very dearly nicknamed “dog food with rice and shrooms” 🙂 Because let’s face it, vegan mince visually resembles dog/cat food. And yes, I’m one of the vegans that joke and laughs wholeheartedly about their food and all the misconceptions and stereotypes associated with this diet type.
Well…Maybe this subject deserves an article of its own, but this is a recipe post, and I’m digressing, so without any further ado, here’s another very easy delicious vegan recipe. Enjoy!
- 150g basmati rice
- 200g champignons (I prefer the brown ones)
- 180g vegan mince
- 2 tbsp vegetable oil
- salt to taste
Prepare the rice as per the instructions on the box, or with your favorite method. I start with preparing the rice, because I steam it for 30 minutes, almost the exact total time for this recipe. If prepared by a method that takes less time, it will shorten the total time of preparing this recipe.
Clean the champignons, slice them and sprinkle them with salt to taste. I always cut my vegetables in bigger pieces (especially champignons) because this way they keep their flavor and are juicier.
Preheat 1 tbsp. of your favorite vegetable oil in a wok or a pan and brown the champignons.
Preheat 1 tbsp. of vegetable oil in a pan and stir-fry the mince for 3 minutes, or as indicated on the box.
Serve hot 🙂
You can build on this recipe very easily. For example you can add shredded carrots to the mince when preparing, or flavor it with a little bit of garlic.
If you prefer more aromatic dishes, you can garnish with freshly cut coriander.
If you find the mince a little bit too dry, serve the food with fresh bell peppers or cucumbers.
